Low-fat Chocolate Chip Muffins

Introduction: Low-fat Chocolate Chip Muffins

Low-fat Chocolate Chip Muffins Recipe:

2 cups all-purpose flour

½ cup sugar substitute (I used stevia)

3 tsps. baking powder

½ tsp. salt

1 tsp. vanilla extract

1 cup almond milk

1/3 cup apple sauce

2 egg whites

¼ cup brown sugar

1 cup semi-sweet chocolate chips (I used mini)

Recipe Directions: Preheat oven to 400 degrees; in a large bowl add egg white, apple sauce, sugar substitute, vanilla and brown sugar. Stir until the ingredients are combined and slowly stir in milk. Mix the dry ingredients in a small bowl and add to the mixture. Mix until dry ingredients are blended in well. Let sit for 1-2 minutes and fold in chocolate chips. Place cupcake liners in a muffin tin and add 1-2 heaping tablespoons of batter to each liner. Bake in the oven for 20-25 minutes or until a tooth pick inserted in the middle of the muffin comes out clean.

Questions & Answers

Made them and they turned out decent! The dough was a little breadier than expected though, the muffin often sticks to the paper linnings... I wasn't great at separating the eggs and I used soy milk not almond... I don't know what made it so doughy but either way they're still pretty good.

They Look so good. Is it the same recipe if you dont use the chocolate chips?

These look tasty!
