Introduction: ​​"Mac N Cheese" Butternut Quinoa (4 Ingredients)

Who doesn’t love Mac N Cheese?! Simple to make, delicious, high in protein and you get your vegetables too!

Ingredients:

  1. 1 1/2 cup butternut squash (frozen&chopped from Costco)
  2. 1/4 cup milk
  3. 4 cups cooked quinoa
  4. 1 cup shredded cheese (the stronger the cheese the better)

Optional toppings:

  1. Sriracha
  2. Feta cheese crumbles
  3. More shredded cheese
  4. Paprika

Instructions:

  1. Boil butternut squash in about an inch of water for 10-15 minutes until tender.
  2. Drain.
  3. Add milk and cheese.
  4. Stir.
  5. Add quinoa.
  6. Stir.
  7. Enjoy.
