Mandarin Orange Salad

I remember having this fruit salad when I was younger and for the longest time I didn't know what was in it.  I was really surprised to find out cottage cheese was one of the main ingredients!  This is a great quick treat you can make for any picnic or just for something to snack on.

Ingredients:
  • 2  15 oz. Cans of Mandarin Oranges, drained
  • 1 6oz Package of Orange Jello
  • 1 lb. of Cottage Cheese
  • 6-8 oz of Cool Whip

Mix everything together.

No really.  That's it.  Just mix everything together.  Make sure you get the jello really mixed up in there or you will end up with clumps of orange jello that really don't taste very good.  Also, the amounts are just what I used.  You can use as much as you want of any of the ingredients, just taste it and see what it needs more of!  I find it is good to have lots of mandarin oranges.  

At first I only put in one can and quickly decided that wasn't enough.  Don't worry about being careful when you stir, it adds to it if you really stir it up and break up the orange pieces.

Also, if you keep this for more than one day and it seems to deflate, add in more cool whip to fluff it up again.

This looks so good - simple and delicious - also love that you have cottage cheese in there - good to have protein! I want to try this soon. At my family events my aunt always brings this "green fluff" which uses some of the same ingredients - it also has some marshmallows, thin slices of pineapple (that would be good in yours) and sometimes it has nuts...yum!

Tried making this tonight. Turned out very runny. Should I have drained the cans of oranges or was I ok leaving the liquid in? If it doesn't set up, would you recommend a 3oz pack of orange jello to thicken?

Oh, yes. I'm sorry. You should drain them first. That is just like me to forget a detail like that! I'm actually not sure how it would be with more jello, might be interesting to try.
