Summertime is the perfect time to try out new frozen treats. I wanted to create a healthy frozen snack instead of the store bought Popsicle which may contain artificial flavors with lots of sugar. I really like yogurt with mango and its also in season right now! To make it more interesting, I decided to test it out by adding jello to the mix.
Step 1: List of Items
Ingredients you will need:
1 cup non-fat plain yogurt
3 ripe mangoes
1 pack of jello (I used cherry flavor)
2 tablespoons of honey (I used maple syrup)
Remember to store the yogurt in the fridge so it is fresh when you need it!
Step 2: Ready the Jello
I recommend using honey, but I ran out of honey, so I substituted it with maple syrup which also works!
Mix the jello powder and make sure its gelled before moving to the next step. From experience, one pack of jello is more than enough. You could use half of the powder and save the other half for later or enjoy the rest of the jello as a snack :D.
Here I used a square container because I thought it’d be easier to take out and cut. That was not the case. I think it would have worked better if I placed saran wrap in the container, then poured the jello mix and closed the lid before storing it in the fridge.
Step 3: More Mangoes!
Prepare the mangoes by peeling all three. Cut one of the mango in half (avoiding the pit) and save it, take the rest of mangoes (without the pits) and put it into the blender.
Take the yogurt out of the fridge and add one cup to the blender. Add 2 tablespoons of maple syrup (in my case), Blend the ingredients. Taste it, and you can choose to add more if you like. I like the tart taste of yogurt, so 2 tablespoons of maple syrup worked for me. Blend it once more.
Step 4: Dice and Cube
Now we take the jello out of the fridge, only one-third is needed. Cut the jello into small cubes, store in a bowl. Take the mango half that was saved previously, cut that into small cubes as well, and store in the same bowl.
Step 5: Mix and Mix
Take the mixture out of the blender and add it to the bowl. Mix it with a spoon until it is well blended. Pour the mixture into a measuring cup. Take the Popsicle molds out and pour the mixture into the the molds. Let it freeze overnight.
Step 6: That's It!
It turned out better than I expected, you can really taste the flavor of the jello and it has a nice texture overall. You can try switching the jello flavor into strawberry, lemon, or even green apple! I think they would go really well with the taste of mango yogurt. You can also substitute jello with coconut jelly for a different texture. Hope this inspires you to mix and match the ingredients to make your own custom yogurt Popsicle with a twist!
