Meatloaf on a stick

or should I say Meatball?...even though it is in the shape of a ball and made of meat I made it just as I do my meatloaf so therefor it is 'meatloaf on a stick.'

When I saw the contest for "stuff on a stick" I thought "oh that's so me!" Even though I am known for my baking of sweets I'm also a good dinner gal, and I'm quite pleased with how they came out!

So lets get to it!

Step 1: Ingredients & Materials

Ingredients 

1 pound of ground meat
(Beef, Turkey, Chicken) *I used Turkey
3/4 Cup diced peppers (Yellow, Green, Red) *I used all three
1/4 Cup Onions (Optional) *I used sweet onions
1/3 Cup Bread Crumbs (store bought or homemade)
2 large eggs 
1/4 teaspoon of ground pepper
*I prefer it from a pepper mill but that's just me.
1 Tablespoon of Worcestershire sauce *Lea & Perrins is the best in my opinion.
2 or 3 cloves of Garlic finely minced *I have a groovy lil plate that makes my garlic like a paste, you should get one they're awesome! also you need to slice the clove down the middle and remove the sprout (green or not)-- technically called the "germ" you could always supstitute Garlic powder if you don't have any fresh Garlic.

Tomato Topping (optional)

2 Tablespoons Ketchup 
2 Tablespoons Tomato Sauce



Materials 

Sticks *of course! I used kabob skewers and broke them in half
Cupcake pan *you might just be able to set them on a baking sheet also
an oven :) *to bake them in!



Step 2: Heat & Mix...

preheat your oven to 375*

drop in enough oil to coat the bottom of each cup in the cupcake pan you may even want to rub it up on the sides.
IF you are using a fattier meat you shouldn't use any oil at all. I used a very lean Turkey so I had too.

Mix all the Meatloaf ingredients together in a bowl

Mix the Ketchup & Tomato Sauce together and set aside

Step 3: Roll & Stick...

roll the Meatloaf mixture into balls a little bit bigger than a golf ball

take your stick or "skewer" and poke it right down through the middle but make sure not to poke it all the way through. 

carefully place them into each cup

and yes they will become slightly darker or a lil "burnt" I should say but it's fine they won't catch on fire or anything.
if you want to be safe you should stay in the kitchen and check on them.

Step 4:

In your preheated oven set to 375* Bake them for 25 minutes.

Take them out and spoon the Tomato Mixture on top of each "Meatloaf"

Put them back into the oven for an additional 10 minutes

If you do not want the sauce just cook them the full 35 minutes

You could even top them with mashed potatos or with your favorite cheese *
I would prefer Cheddar.

Step 5: Eat & Enjoy...

anyone who enjoys meatloaf in an actual "loaf" will also enjoy them ON A STICK!

Children, Men, Women, and even Dogs will enjoy them!

thanks. anything you could put on a stick would be fun for both kids and adults to eat at a party.

haha yeah I thought so too. that's our old dog Cruise. he loves leftovers!

oh and they are! even if you have your own recipe for meatloaf you could always make that loaf into mini meatloaves or even on a stick! I added an extra egg just to be sure they stuck to the stick.

We have a similar little grating plate, ours shaped like a kitty cat. I was told it is for ginger.

oh really? I haven't tried it for ginger! I will next time for sure! I wish mine was a kitty shape.

thats a great sounding recipe, for an added twist some grated or chunked cheese would go great. You meatloafballs look like they almost fill the muffin tin, why not skip a step and make them muffin shaped? HMMmm Meatmuffins...Just a thought. Soaking the skewers will cut down on the browning as would wrapping the sticks in foil. Thanks for the great idea and well done ible (no pun intended)

oh why thank you! I did think about adding some sort of cheese somewhere...after I was already eating them! maybe I will cook them again and try it with cheese. oh and I did soak the skewers thinking it would keep them from browning....maybe I didn't soak them long enough?
