Introduction: Mexican Molletes

Step 1: Ingredients
(makes 8 molletes)
- 4 bolillo bread
- 300 grams manchego cheese
- 1 bag of refried beans (400 grams)
Step 2: Cut Bread in Half
Cut Bolillo bread in half. Remove a little of the bread that is inside
Step 3: Add Margarine
To give a richer taste, add margarine to the bread
Step 4: Add Beans
Add refried beans. You can buy refried beans previously cooked which are ready to serve (you will save a lot of time). If you do not find those, you just need to cook beans and blend them.
Step 5: Place in Tray
Place molletes in tray. Ensure they have enough space between one and another.
Step 6: Add Manchego Cheese
Add Manchego cheese. Actually, any cheese that can get Au Gratin is suitable for this recipe.
Step 7: Cook Au Gratin in Oven for 10 Minutes
Cook in the oven for 10 minutes. Molletes will get au gratin
