Picture of Mini Bacon Cups
Want a creative way to make bacon?  How about making it into a mini cup you can fill with eggs, hashbrowns, or any other filling you could think of to go with bacon?  Simple, easy, and perfect for a brunch or breakfast party... or any other meal you want some bacon yummyness in.

It's also insanely easy to do to create a beautiful "wow" factor for any gathering.

Step 1: What You Need

Just two very simple things:

Bacon (obviously).  I think thinner probably works better for this, because it will crisp up nicely.

A Muffin Tin. NOT A MINI ONE. Bacon naturally shrinks as some of it's fat gets melted and cooked out, and so if you use a regular size tin, your bacon cups will shrink to mini size.

I have found that this actually works better if you use the cupcake tin upside down. Invert the pan and lay the bacon over the top of the raised sections. You should place the cupcake tin on a larger cookie sheet or casserole dish to catch the fat drippings. By cooking the bacon on the outside of the cupcake tin, the cups won't droop in on themselves of collapse. You will have a wide opening on the cup and will be able to fill them with more goodies!
Great tip! Tried your method but used my propane BBQ grill to cook them (kept my oven clean and saved on electricity). I also placed the bottom of a Pyrex casserole dish, sprayed lightly with cooking oil, on top of the bacon-covered cupcake tin while cooking to form a flatter bottom. When sides of bacon started to brown, I removed the glass dish to allow the tops (or bottom of bacon cup) to crisp up. Once I even roasted my pumpkin/squash seeds in the Pyrex dish at the same time!

looks like egg beaters. you can get eggs fluffy by adding a tablespoon of water or milk per egg to your mixture.

Love these! Have seen similar cups made in a variety of ways but they always look so good! I can see where doing them upside down would make them less greasy. Has anyone reheated these? Made them in bulk for a party?

As i was taking notes about how to make these, a few ideas sprang to mind:
--allow to cool, fill with shredded lettuce mixed with diced tomatoes and mayo and serve cold as an appetizer or quick beach/picnic bites
--fill with prepared cole slaw and again, serve cold
