Not only is this recipe delicious, but it won the Portability Award in the Arbitrary Category of the first ever Instructables Banana Bread Bake Off. In its small paper shell, you can easily shove it into your pocket and take it most anywhere. Don't even consider trying to do that with a normal loaf of banana bread. You can't! That is what make this recipe so portable. 

Did I mention it tastes pretty good too? Honestly, the taste is my favorite part of this recipe. It is not overwhelmingly sweet as banana bread can tend to be and it has a nice smooth subtle flavor.

Ingredients:
1/2 cup butter
2 eggs
1 1/2 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
2/3 to 1 cup of sugar
1 cup mashed bananas (2 large ones)

Preheat oven to 375 degrees.

Cream together butter and sugar in a bowl.

Add eggs and vanilla and mix well.

Add mashed bananas and continue mixing.

Mix together dry ingredients in another bowl and then add to the wet ingredients. Mix until just blended.

Fill cupcake shells halfway.

Bake for 12 - 15 minutes until golden brown. Poke a toothpick into the top. If it comes out clean, it is done.

Grandma would be so proud! They look wonderful! And, BTW, I've turned this recipe into a vegan, no sugar added, healthy and delicious recipe. I guess I should post it one of these days! I used to sell them at Organica and people loved them.

I use a similar recipe but have always made it in a 9x13 cake pan and then cut it into bars. I like the muffin concept. You could make maple/orange/regular butter cream or a glaze for the top and make them even tastier.

Your recipe is good your directions are easy to follow. Separated steps and more pictures would make this instructable even better.
