The eggplant crust is a healthy option to the regular pizza.
You can get really creative with the toppings.

Step 1: Ingredients
Eggplant - 2
Cheese - 2 slices
Tomato - 1/4 Cup
Green Bell Pepper - 1/4 Cup
Egg - 1
Shredded Chicken - 1/4 Cup
Pizza sauce - 2 Tbsp
Step 2: Slices
Slice the eggplant in the horizontal direction. Get few big slices from the middle.
Step 3: Pepper and Salt
Brush the eggplant generously with the remaining olive oil and sprinkle with salt and black pepper.
Step 4: Bake
Bake at 180 degree Celsius until the eggplant begins to brown on one side. Once down flip the eggplant slices and bake on the other side.
Step 5: Prepare Topping
Beat an egg and add pepper and salt.
Keep aside chopped tomato and green bell pepper.
Step 6: Topping
Add Pizza sauce and place cheese slice (Cut in rounds) over the baked eggplant.
Add some beaten egg.
Step 7: Varieties of Topping
You can add different types of topping.
1. Pizza Sauce, Cheese slice, shredded chicken, egg, tomato and Green bell pepper.
2. Pizza Sauce, Cheese slice, Cumin seed, egg, tomato and Green bell pepper.

Step 8: Ready to Bake
Try different combinations. The eggplants are ready to be baked.
Step 9: Bake
Bake at 180 degree Celsius for 10 minutes.
The cheese melts and starts getting brown.
Remove the eggplant pizza from the oven.
