Introduction: Mini Pumpkin Pies

A bit easier than an actual pumpkin pie, this is a fun snack, especially for Halloween parties!

Step 1: Sugar Cookies!

You will need: -2 cups of softened butter
-2 cups of sugar
-4 cups of flour
-1 teaspoon of vanilla
Mix all of the ingredients. Tah dah, cookie mix is done!

Step 2: Pumpkin Filling!

This is how you make your own pumpkin filling. You could just buy a can, but I'm keeping your options open...
What you need: -A pumpkin, about 8" is usually a good size, that makes 3 cups
-1 cup of sugar
-1.5 tsp. ground cinnamon
-18 oz. evaporated milk
-4 large eggs
-A few spices like nutmeg, ginger, etc. USE DISCRETION, nothing will ruin it better than too much of a spice, use less than 1 teaspoon for these!
Take your pumpkin, make sure there's no seeds or anything left in it. Cut it up in half, and put it in a bowl with a bit of water. Microwave it on high for 15 minutes, then use your judgment, just make sure it is nice and soft. Once that's done, take out the skin, and put the cooked pumpkin to the side for a moment while you get the rest of it ready. Mix all of the above ingredients to make your pie filling, use a blender for this part, not just a spoon, it needs to be puree pretty much. Then you've got your pumpkin filling!

Step 3: Bake It!

What you will need: -Mini muffin cups
-Sugar cookie mix that you made earlier
-Pumpkin filling you made earlier
Preheat the oven to 350 degrees F. Fill each cup with a bit of sugar cookie mix, and pinch the edges out to make a small bowl to fill. Then, pour a little filling into each one. Once you are done, put them in the oven on a cookie sheet, and cook for 10 minutes, or until a toothpick inserted in the center will come out without any filling on it. They can be served warm, or refrigerated, either way, they're great at parties (not just Halloween, even though thats where they fit in best), or just because they're good. A little Coolwhip on top isn't bad either!
