Introduction: Mini Red Velvet Cup Cakes

These cupcakes are so easy to make and delicous too!
you will need:                                                   Cream Cheese Icing:                                      Other:
2 large eggs                                                     1 lb. cream cheese ,softned                    2 mini muffin pans
1 cup butter milk                                              2 sticks butter,softned                              1 package of mini cupcake sheets/cups
11/2 cup vegatable oil                                    1 teaspoon vanilla extract                         2 bowls (medium and large)
1 teaspoon cocoa powder                            4 cups sifted cofectioners sugar             1 electric mixer
1 teaspoon salt                                               (sprinkles, chopped nuts,fresh fruit        1 tooth pick
1 1/2 cup baking soda                                    for garnish)                                                  1 sifter
1 1/2 cup sugar
2 1/2 cup all purpose flour
2 tablespoon red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Step 1:

Preheat oven to 350 degrees F.

Step 2:

In medium bowl sift together flour,sugar,baking soda,salt, and cocoa powder.(set aside)

Step 3:

In large bowl with electric mixer gently mix together oil, buttermilk, eggs,food coloring, vinegar, and vanilla.

Step 4:

Add sifted dry ingredients to wet mix and mix until smooth and thoroughly combined

Step 5:

Line 2 mini muffin pans with mini cupcake papers.Divide batter evenly among cups(about 2/3 filled).

Step 6:

bake in oven for 20 to 22 minutes.(turn the pans once half way through cooking.)

Step 7:

Test the cupcakes with a toothpick for doneness.Let the the cupcakes cool completely before putting the frosting on.

Step 8: Cream Cheese Icing

In large mixing bowl mix the cream cheese, butter ,and vanilla until smooth.Add the sugar on low speed and beat until incorporated.

Step 9:

Get the icing mix and beat while te speed is increasing,until its light and fluffy.

Step 10:

Frost the icing on  on the cupcake,don't use to much.

Cook's note:Frost the cupcakes with a butter knife or a pipe with a big star tip.
