There is nothing worse about being a vegan than craving your favorite ice cream. I've found a healthy, delicious way to satisfy those old cravings... 

Step 1: Things You Will Need

  • About two tablespoons of chocolate chips
  • A handful (about 12 leaves) of fresh mint leaves picked from your garden (or bought at the store!)
  • A couple of handfuls of spinach
  • 1/2 cup silken tofu (Must be silken!)
  • About two frozen bananas
  • A splash of soy milk

im quite curious about the tofu being added to this mix. what does it do exactly?
I understand this is a response over a year later, but the tofu is for protein :)
In my experience, this works fine without the tofu, and you could use mint extract instead of mint leaves.
makes it thicker i reckon :)
I tried this recipe, and actually love it! <br><br><br>I used almond milk, and the 66% cacao ghiardellhi chocolate chips instead. <br><br>In the future I'll probably use just one banana, more almond milk, I really didn't like the thick consistency.
