This one is a little odd, but I think it's very good. My boyfriend, not so much. He was NOT impressed, but he dislikes mint.

It's pretty sweet - I think it'd be wonderful with a hard cheese and some crackers or anything salty. I served it with toasted pita bread and it was quite good. :)

Step 1: What you'll need:

  • 1 1/2 cups peas (I used frozen and let them thaw on the counter)
  • 1/4 cup mint leaves
  • 1 tbsp olive oil
  • clove of garlic
  • salt and pepper to taste
  • lemon juice to taste
  • a food processor
Not too much! :)

Also, pardon the mint leaves. They were taking a bath. Very important.

Oh yummm, never thought of adding mint. I have NO mint or I would be making this right now. Note to self, buy some mint seeds to plant.
Whoa! I'm really stoked to try this combo. I've been on a pea kick since I saw a Giada rerun about pea pesto.

Major props on only 1 T of olive oil. I'm looking forward to a less-dense alternative to the hummus I'm used to. :)
