Mint and pea hummus recipe

This one is a little odd, but I think it's very good. My boyfriend, not so much. He was NOT impressed, but he dislikes mint.

It's pretty sweet - I think it'd be wonderful with a hard cheese and some crackers or anything salty. I served it with toasted pita bread and it was quite good. :)

Step 1: What you'll need:

  • 1 1/2 cups peas (I used frozen and let them thaw on the counter)
  • 1/4 cup mint leaves
  • 1 tbsp olive oil
  • clove of garlic
  • salt and pepper to taste
  • lemon juice to taste
  • a food processor
Not too much! :)

Also, pardon the mint leaves. They were taking a bath. Very important.

Step 2: Assemble!

Peel the garlic and break it into chunks and throw it in the food processor along with the peas and mint. Add a good pinch of salt and a few grinds of pepper.

Step 3: Process!

Pulse a few times, and once everything starts breaking down, drizzle in a tablespoon of olive oil while processing on high.

Keep going (and scrape down the sides if you've got big chunks hanging out) until everything is well combined and looks uniformly green and slightly lumpy like the photos.

Step 4: Taste test and serve!

At this point, it might be a bit too sweet. I added a bit of lemon juice to make it a little more acidic. You can also add more salt and pepper if you like.

Now spoon it into a pretty dish and serve it. :D
