It's pretty sweet - I think it'd be wonderful with a hard cheese and some crackers or anything salty. I served it with toasted pita bread and it was quite good. :)
Step 1: What you'll need:
- 1 1/2 cups peas (I used frozen and let them thaw on the counter)
- 1/4 cup mint leaves
- 1 tbsp olive oil
- clove of garlic
- salt and pepper to taste
- lemon juice to taste
- a food processor
Also, pardon the mint leaves. They were taking a bath. Very important.
Step 2: Assemble!
Step 3: Process!
Keep going (and scrape down the sides if you've got big chunks hanging out) until everything is well combined and looks uniformly green and slightly lumpy like the photos.
Step 4: Taste test and serve!
Now spoon it into a pretty dish and serve it. :D
