Bajji are a kind of deep fried fritters and are often made at home to have it as a tea time snack. To make mirchi bajji, Bajji chilies are dipped in gram flour batter and crisp fried to perfection.

So coming to Bajji chilli, I some where came across that they are also called as Italian peppers. These are long variants of chilli. They are also called as banana chilli. They are long and light green in color and not that spicy when compared to the green chillies.

You can also use various combinations of stuffing like grated carrot or sprouts or whatever you wish.

Step 1: Ingredients

Preparation Time - 10 minutes

Cooking Time - 10 minutes

Ingredients:

6 bhajji mirchi (green chilies,plump and long)

¾ cup besan flour /gram flour/ chickpea flour

1 to 1 ½ tbsp. corn flour or semolina

Salt to taste

½tsp ajwain (carom seeds / vaamu)

¼ tsp ginger garlic paste (optional)

¼ tsp red chili powder (optional)

¼ tsp turmeric

Pinch of cooking soda (if you skip this they will not puff)

Oil for deep frying

Ingredients for stuffing:

1 finely chopped onion (You can add grated carrot and sprouts)

2 tbsp finely chopped coriander leaves

1 finely chopped green chilli

1/2 tsp red chilli powder

1/4 tsp chat masala (optional)

Salt as per your taste

Step 2: Prepare the Chilli

Wash and pat dry the chillis. Slit chillis lengthwise and deseed them.

Step 3: Batter

Mix flour, salt, soda, turmeric, red chili powder ginger garlic paste and ajwain thoroughly. Make a batter adding just enough water to make a neither too thick nor too thin batter. The batter should just coat the chili when it is dunked in the batter.

Whisk it gently 4 to 5 times for the soda to act well. Do not over do.

The soda enables the batter to puff up when fried. Hence it is extremely important to add.

Step 4: Fry

Cook in medium flame to ensure the bajjis get cooked inside. Now dip the chillis one by one in the batter and deep fry them. Fry them under medium flame. Flip to the other side and fry. Deep fry until golden brown. Remove to a kitchen towel. Repeat the same with all the chillies. Place them over the tissue to remove the excess oil.

Step 5: Filling

Mix together chopped onion, coriander leaves, green chilli and chat masala. You could any stuffing here. Once they are done keep it aside.

Step 6: Slit and Fill

Now again slit the fried chillis lengthwise and stuff it. That's it a hot and spicy snack is ready. This is very popular in India in different variation. It is loved by everyone and a wonderful street food.
