Introduction: Monterey Chicken

Delicious cheesy chicken recipe from my co-worker Laura!


Ingredients


1/8 cup flour
2 tbsp taco seasoning
4 chicken thighs (half a package) - rinsed and trimmed
(I prefer no skins but if you like them knock yourself out)
1/8 cup butter
1 cup crushed tortilla chips
1 tbsp finely chopped onion
1/2 tbsp canola oil
1 tbsp four
1 6oz can evaporated milk
1/2 cup shredded monterey cheese
1/2 tsp lemon juice
dash of hot sauce (to taste)

Directions

Preheat oven to 375
Melt butter in a baking dish
Combine 1/8 cup flour with 2 tbso taco seasoning, spread on a plate
Spread crushed tortilla chips on another plate
Roll chicken thigh in butter, flour mixture, and tortilla chips, return to pan
Complete with all remaining chicken
Bake uncovered for 50 minutes

Meanwhile for cheese sauce, warm 1/2 tbsp canola oil in a sauce pan
Saute onion until tender but not brown
Stir in  1 tbsp flour, add salt to taste
Add evaporated milk and hot sauce, to taste
Stir until thickened and bubbly
Add cheese and 1/2 tsp lemon juice, stirring until cheese just melts

Plate chicken, top with cheese sauce
