These rock cakes are really nice. The mix makes about 8-9 of them.
Ingredients:225g (8 oz) self raising flour100g (4 oz) butter75g (3 oz) caster sugar100g (4 oz) mixed dried fruit (currents, raisins and sultanas)1 egg, beaten10-20 ml (2-4 tsp) fresh ...
Sift the flour into the bowl.
Rub butter into flour until mixture resembles fine breadcrumbs.
Add sugar and fruit
mix to a very stiff batter with beaten egg and milk.
Place 8-9 spoonfuls of mixture, in rocky mounds, on a well greased backing tray. (I used flour it's healthier) allow room between each one as they spread slighty.) ...
Bake at 180C (400F) Mark 6 for 20 minutes.
Cool on a wire cooling rack or leave on tray to cool.
Now enjoy them with a cup of tea!
