Hi there!
Here is a recipe I cooked up for a cheesy beef soup with a Mexican twist. It is very filling and the leftovers are great (maybe even better than the initial serving).

Step 1: Ingredients

1 Lb ground beef
2 cans Campbell's Fiesta Nacho Cheese Soup
1 15.5oz can black beans
1 10oz can of diced tomatoes & green chilies
1 packet or 1/4 cup of taco seasoning
1 3/4 cup rice
1 1/2 - 2 1/2 cups milk
 
wondering if I should do it with chicken instead of beef?

You really should! It is so easy and so yummy.
I have adjusted the recipe slightly, and gathered the ingredients. I will be dining upon this (or a close variant) tomorrow evening.
