Can the peanut butter be substituted with something else?

Sorry, I don't think so. It holds the oats together.

I love it! It is so easy to make and so easy to eat the whole pan! Should the texture be somewhat fudgy?

Yes, it does have a fudge texture. A pan never makes it to the end of the day at my house either! :)

You weren't kidding! 15 minutes and into the fridge they went! I had some left over peanut butter and white chocolate chips so I put those on as well!
