Introduction: No Hassle Baked Potato With Bacon

I loved the Forrest Gump movie. Potatoes are a lot like shrimp and when I make them, I think of Bubba's shrimp quote "Anyway, like I was sayin', shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that's about it." In 2007, the American Film Institute ranked Forrest Gump as #76 Greatest Movie of All Time.

This potato recipe will wow just about any of your dinner guest. It is simple to make in many different ways, depending on what entree will be served and what you have in the kitchen! It is a well balanced meal by itself and can be prepped for baking in 5-10 minutes and ready to eat in approximately one hour. It is one of those amazing 1 pan meals with easy clean up! Step 1: Ingredients and Utensils

This is what I used today but you can use what ever is in your kitchen that suites your taste buds! We love the bacon, garlic, and Paramesan with some fresh vegetables on the side!

Potato ( Russet Potatoes, Red Potatoes, White Potatoes, Yellow Potatoes, Fingerling Potatoes or Petite Potatoes.)
Grated Parmesan cheese 
Garlic buds
Bacon
Ground pepper and Sea salt
Butter
Bell Pepper different colors set it off.
Fresh Herbs: Thyme, Parsley, Rosemary, or whatever you like or have on hand.
Utensils:          
Cookie sheet, silverware, serving plate, cheese grater.

Step 2: Preparation

I scrubbed a Russet potato so it would be lighter in color because I normally use a yellow potato.
Slice the potato as shown but don't cut it all the way through.

I had very large potato's and it took 1 hour and 15 minutes to bake which caused the pepper tips to over brown. 

Step 3: Wash and Cut Vegetables and Grate Cheese

Wash the vegetables.
Slice as shown. I like to cut the slices longer so if baking burns the tips, I can cut them off so the bright color will show. It is nice to have a little contrast.
Grate the cheese.
Slice the bacon.

Step 4: Fill the Baker

​Start layering the vegetables, garlic buds and bacon in-between the potato slices as shown.
Top with butter if desired.
Season with salt and pepper or what ever you like.
Add herbs.
Place on a cookie sheet and bake at 350 degrees F for approximately 1 hour. 
Top with Parmesan cheese.
Garnish with vegetables.

Step 5: Sunshiine's Final Thoughts

Not bad for a one dish meal eh? It is better than microwaving a frozen TV dinner and only  minutes to prepare with minimal  clean up. I am not sure how this will work in a microwave because I have not tried it in the microwave.
