Introduction: Oatmeal-Coconut Cookies

This is a recipe based on Martha Stewart's Healthy Oatmeal Cookies, but a bit jazzed up. I love coconut!

Ingredients:

  • 1 cup flour
  • 1 tsp baking powder
  • 1/3 cup oil
  • 2/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup oats
  • ½ cup shredded coconut
  • ½ cup craisins

Directions:

Preheat oven to 175C / 350F

In a bowl, mix flour and baking powder. In a second bowl, mix oil, sugar, egg and vanilla. Add flour mixture and stir. Add oats, coconut and craisins.

Roll into balls, place on cookie sheet and slightly flatten. Bake 15-18 minutes, until lightly browned. Cool and enjoy!
