Oatmeal Cream Pie Cookies
Time: 30-40 minutes
Makes 10-12 Oatmeal pies
Step 1: Oatmeal Cookies
1 cup crunchy or creamy peanut butter
1 stick or 1/2 cup softened butter
1 cup brown sugar
1/2 cup white sugar
2 teaspoons vanilla
Last, mix in....
1 1/2 cups rolled oats
1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
Scoop cookies onto a cookie sheet and bake for 14 minutes at 350 degrees.
Let cookies cool before adding the cream filling.
Step 2: Cream Filling
1 tablespoon of light corn syrup
1/2 teaspoons vanilla
2 egg whites
1/2 cup sugar
Add all ingredients into a mixture and beat with whisk attachment on your stand mixer for about 10 minutes. Should be stiff.
Once cookies have cooled, add a spoonful of cream filling between two oatmeal cookies.
