Introduction: Only Have "Eye" for You Breakfast Sandwich

Prepare to impress your mate!  If he or she is in dire need of a fatty super sammy this is it.  It's the kind of sandwich for a lazy let's stay in our jammies all day Sunday morning.  

Step 1: Ingredients

-  2 slices whole grain bread
-  1 egg
-  a few slices of green bell pepper
-  2 slices of turkey
-  1 small potato sliced into rounds
-  shredded mozzarella cheese
 - 1 tsp of oil
-  1 tbsp of butter
-  1 shake of seasoned salt
-  1 shake of black pepper
-  1 shake of onion powder

Step 2: Prep, Prep!

Heat the oil in a skillet on medium heat.  Peel and slice your potato into rounds.  Slice about 3 rounds off the bell pepper.  Once your skillet is warm, add your potatoes and peppers.  Sprinkle a handful of water over the mixture and cover with a lid for 7 minutes on medium low.  Do not disturb, wait for the the timer to go off.

While the potatoes/peppers are cooking, grab a biscuit cutter, clean empty tuna can or in my case my daughter's sippy cup and press into one of your bread slices. Apply pressure and twist to get a nice clean round cut into the bread. Lift your cutter and pop the bread round out.

The timer has gone off.  Remove the lid carefully and flip the taters and peppers.  Try to shape the mixture so that it will fit the width of the bread nicely.  Add mozzarella cheese, however much you want.  Remove your potato mixture and set it aside on a plate.  Brown up your turkey in the same skillet and place on top of your potato mixture.  

Step 3: One-Eyed Jack

 Add one tablespoon of butter to your skillet.  Once it's melted, turn up the heat little to medium high and add your bread slices.  One of them should have a hole in it.  Crack your egg directly into the hole without breaking the yolk.  Let this cook for 1 - 1/2 minutes.  You should see the egg starting to set up.  Flip your regular piece of toast over, easy right?  Now, for the star of the show.  I recommend using a wide spatula and spunk.  Gently lift the egg/toast by sliding your spatula under it, making sure you have the whole slice of bread, quickly flip it over.  Be careful not to break the yolk.  If you do, it's no biggie.  You could just put a lid on it and steam cook the egg but then your bread may become soggy.  I say go for the flip!  Once your egg is cooked (2 minutes or so), it's time to assemble.

Step 4: The Creation

Lay the regular piece of toast on your plate.  Top with potato/pepper/cheese/turkey.  Place your one-eyed jack on top and marvel at it's glory.  If your mate isn't impressed by this, they don't deserve to eat it all.  Happy Eating!
