Oreo and Peanut Butter Brownie Cakes

Oreo and Peanut Butter Brownie Cakes
So, after being gone all last week, this has been catch up on the house week. Mostly laundry actually. Man, who knew that a weeks worth of laundry from 5 people could be so daunting. Yikes!! But I am kind of behind on my cooking and baking as well since I've been gone and cleaning. Not to mention, I needed an Oreo fix! So here we are. I saw this recipe earlier this week on a blog I kind of stock called Picky Palate. If you don't follow this blog, you should!! It's amazing. Plain and simple! And that is where I found this little concoction. Gorgeous, right!?! I love all the layers. Just makes you wanna take a bite, and really, all you need is a couple ingredients. You just prepare your brownie mix, spread oreos with peanut butter, stack, cover with brownie mix and bake. Easy and so delicious! Enjoy!!

Oreo and Peanut Butter Brownie Cakes

1 box brownie mix, 8x8 inch size
24 Oreo Cookies
1/2 cup creamy peanut butter

Preheat oven to 350 degrees and line a 12 muffin cup baker with paper liners.

Prepare brownie mix according to package directions. For each cupcake cup spread 1 teaspoon of peanut butter over 2 Oreo cookies and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.

Makes 12 servings

When I use brownie mix in a cupcake paper liner, they do not stick if I place the paper liner in the tins, then spray with Bakers joy.

Yumm :)!

Unfortunately, the cheaper liners can cause sticking to the sides of the paper (for any recipe). The best liners to use is the silicone reusable liners. Then you can pop them out of the silicone liner, wash them and reuse them.

I had the cup cake paper stick to sides also

I made these and the only problem I have which no one seems to have had is that they are stuck to the cupcake papers and the papers are not easy to remove. I had to cut the paper off which is a pain. I did exactly everything they said so I dont know why this happened.

Mine stuck a little, but the ones that that stuck the most and were the hardest to remove from the paper were the ones that were a little overfull and the brownie mix baked over the edges of the liners. Also, they stuck more when not stored in a warm place. On all of mine you had to go very slowly with the papers and work them off carefully because they were ripping when you tried to take them off too quickly. I would also be very careful not to over bake them as I think this can cause them to stick to the papers too. Good luck, hope it helps!

I love this recipe and so does everyone who tastes them! I have read some comments that say they cannot get their cookies to soften enough and instead of using butter I found that if I leave them in a warm place (like the microwave) overnight the cookies are quite soft the next day... I also have not made them with regular Oreos but use peanut butter ones and I think that maybe this has helped the cookies soften as well and who doesn't love MORE peanut butter??? :-)

I didn't have enough Oreos so I made some with Girl Scout mint cookies. Also I have a grandkid that doesn't like peanut butter so I just took off one chocolate cookie wafer off one Oreo and stuck the icing side to another Oreo. I crushed up the leftover wafers and sprinkled it over the cookies so we could tell which ones didn't have peanut butter. I haven't eaten them yet. I have to wait until tomorrow's dinner. Although one may disappear before then.

Do the cookies get soft or do they stay hard

stay hard.

I would THINK, I have yet to do it, since I just found this today... but I would THINK that substituting Nutella for Peanut butter would help to make them soft.
Try it, or I will... and we will see what we have, other than an expanding waist line.

A baker friend of mine says, "Soak the oreos in butter."
Oct 27, 2011. 8:48 AMberdandy says:
Some additional info: "Melt butter in a shallow pan, put oreos in the melted butter for a minute, flip and repeat on the other side. I've used it for oreo-based mini cakes."

HAHAHAHAHA! 425 calories wasn't enough...

(Sounds delicious and like it fixes the issue, though.)

Would letting it soak a bit of milk before placing it inside the cupcake soften it up?
Oct 25, 2011. 8:52 AMthechizzle says:
sometimes oreos will soften up when they get stale

THOSE LOOK AMAZING!! I may just have to try them. But since I'm on a calorie restricted diet I made some adjustments that make them a little less calorie dense. I haven't tried this version yet so I'm not sure how it will turn out but I've done the No Pudge brownies for years and they taste just as good as normal brownies.

Here is a reduced fat/calorie version

1 box No Pudge Brownie Mix
2/3 c plain greek yogurt - fat free
24 reduced fat oreos
1/4 cup chocolate PB2 (I'm guesstimating here)
2 tbs water (another guess, may need more to reach the right consistency)
2 packets truvia sweetner
3 tsp cocoa

Mix brownie and yogurt together to make brownie batter.
Mix PB2, sweetner, cocoa, and water together to make a chocolate peanut butter spread.

Prepare like the original recipe but use the No Pudge box as your baking guideline.

This knocks the recipe down to 220 calories a brownie and that's with the double cookie inside. Theoretically, if you do it for one cookie a brownie it would come down to 110, maybe even less since you'd probably use less chocolate peanut butter spread.

Made these for the work pot luck today. Since my family wouldn't be eating them, I upped the ante by dipping the Oreos in butter for one minute on each side (as suggested by a previous commenter - to make the cookies softer). It worked PERFECTLY.

It also made them go from really unhealthy to hideously unhealthy. I kind of feel like a hero.
