Introduction: Oven Roasted Root Veggies

As summer comes to an end, I've started digging out my favorite lazy fall vegetable recipes. This particular recipe features classic fall veggies (squash, potato, and yam), and is one of the easiest recipes I know - simply chop, season, and stick them into an oven. Perfect for anyone going back to school on a budget for both time and money!

Step 1: Ingredients

  • 1/2 butternut squash
  • 1 white potato
  • 1 sweet potato
  • 1 tsp salt
  • oregano, cardamon, thyme

Step 2: Cut Ingredients

First, prepare your veggies by washing them carefully and cutting them up into small ~3cm cubes. (It is best to cut them all up to be approximately the same size, as we want them to cook at the same rate.)

Step 3: Season

Combine all your cut up veggies in a large bowl, and mix with a tablespoon of olive oil. Then, add in your spices! This time, I added in a tablespoon each of salt, thyme, oregano, and some cardamon for added fragrance - but feel free to experiment with whatever spices you have in your pantry.

Step 4: Bake

When all the spices have been mixed into the vegetables thoroughly, places them onto a baking pan and stick it into an oven preheated to 400 degrees F. Cook for around 40minutes, or until the vegetables become soft and chewy. Serve as a side to a nice steak, or just by itself. Enjoy!
