Step 1: MACARONS

90g Egg Whites

56g Caster Sugar

85g Ground Almonds

156g Icing Sugar

Gel Food Colouring (Blue)

Draw a template of Dory and trace this shape onto greaseproof paper. Make sure half of the templates are going right and half are going left. Mix the icing sugar and ground almonds together in a food processor. Sift the mixture 3 times to remove any lumps. Add the egg whites to a stand mixer and whisk on a medium speed until pale and frothy. Slowly add the caster sugar and mix on a high speed for 1 minutes (soft peak stage). Add the food colouring and continue to whisk for another minute (stiff peak stage)Add half of the sifted mixture to the egg whites and gently fold together (10 folds approx).Add the remaining dry mixture and fold until the consistency resembles lava (30 -40 folds approx). Pipe onto a baking tray lined with greaseproof paper. Tap the tray against the work surface to remove any air bubbles and leave to sit for 30 minutes - 1 hour to form a skin.Bake at 170 degrees C for 10 - 15 minutes. Leave to cool before removing from the greaseproof paper.

Step 2: WHITE CHOCOLATE GANACHE

Chocolate Ganache

Ingredients

350g White Chocolate

250ml Heavy Cream

Gel Food Colouring (Blue)

Bring the cream to boil in a saucepan. Pour over the white chocolate and leave to sit for 5 minutes. Stir the mixture until all the cream is incorporated. Finish by adding the blue food colouring and mixing again until homogenous.

Step 3: ICING

Icing

Ingredients

Icing Sugar

Milk or Water

Food Colouring: Yellow, Violet/Purple, Black

Using a toothpick and dray on dory's face with the coloured icing. Pipe the ganache on the base of one of the plane macarons and sandwich together with a macaron with Dory's face.
