Step 1: PIZZA DOUGH

340g Plain Flour

7g Fast Action Dried Yeast

1tsp Salt

1/tsp Onion Powder

1/4tsp Garlic Powder

2tsp Caster Sugar

2 Large Eggs

80ml Milk

85g Unsalted Butter

60ml Water

Melt the butter and milk together before adding the water and leaving to cool sightly. Mix the flour, salt, onion and garlic powder together with the sugar. Add the eggs and the melted butter mixture to the flour mixture and use a dough hook to bring all the ingredients together. Once the dough has formed, knead for 8 - 10 minutes or until the dough is smooth and elastic. Place the dough in an oiled bowl and leave to rise for 2 hours. Once risen, divide the dough into small bite-sized balls.

Step 2: TOPPINGS

Pizza Sauce (Recipe)

Mozzarella (Grated)

Mozzarella (Thinly Sliced)

Pesto (Basil)

Chopped Tomatoes

Flat-Leaf Parsley (Chopped)

Place 3 dough balls into each muffin pan cup and cover with some pizza sauce and grated mozzarella. Leave to rise for 30 minutes before adding the thinly sliced mozzarella on top, along with the pesto, chopped tomatoes and parsley.

Step 3: BAKE

Bake the pizza muffins at 170 degrees C for 15 minutes. Leave to cool for 5 minutes before removing the muffins from the pan.
