In stead of spray paint use vinyl dye. This product wont rub off on hand and doesn't need a top coat. The only thing to watch out for is when you paint the undercarriage the wait time can be about a month because it can be easily scratched off but as long as your car full you should be able to use. I found all the colors i needed at amazon.

is there any chance that the paint can rub off on your hand after a while?

I suggest you clear-coat it 5-6 times, I painted two Xbox 360 remote and the paint on the first started to "fade". On the second, it's all perfect, I used 5 clearcoat.

Nice finish, but I have a few suggestions.
Painting a wiimote or any controller with the hardware still inside can be a bad idea, especially if the attachment port (that thing you stick your nunchuck into), is exposed), gets paint into it. The insides can get all gunky and stop working too (it's a 40 dollar controller, so it isn't necessarily a cheap thing to replace).
You can buy a cheapo tri wing screw driver from the internet (we're talking like a dollar each) to easily open up the housing, remove the guts, and spray paint the shell.
With the screwdriver method, all of the guts will be safe, your buttons will remain the same color, you won't have to mess with taping, and you don't have to hang your wiimote, you can lay both the top and bottom pieces of the shell on the ground.
It produces a better end result too, because spraypainting can be more precise, and you get all of the areas (for instance, the crack in the side, which is a pain to spray paint regularly).
I've done this many times with my controllers, and if you are careful, it can be quite useful.
