-Dahi puri is most famous indian chat. Here i made twist by adding paneer to it and it turned yummy

-First of all to prepare paneer dahipuri we need to prepare puris

Ingredients for puris:

-2 cups semolina(sooji)

-1/8tsp baking powder

-pinch of salt

-3 to 4 tbsp All purpose flour

Step 1: Procedure for Preparing Puris

-Take 2 cups of semolina,1/8tsp baking powder,salt in bowl and mix well

Step 2: Add Water

-Next step is to add water. when water is added semolina absorbs the added water

-Add 3 to 4tbsp All purpose flour to it

Step 3: Kneading

-Mix and knead to soft,elastic,nonsticky dough. Lastly add little oil and knead

Step 4: Roll It Flat

-Grease the surface with oil. Take a small portion of the dough and roll it flat using roller

Step 5: Cut in to Samll Circles

-Cut in to small circles with lid or cap of some wide bottle

Step 6: Frying

-Fry in oil until they turn brown in color.They puff up as soon as you add in oil

Step 7: Baking

-After frying bake them at 150 degree centigrade for 15 minutes to leave the moisture completely.They will be totally crisp after baking

-Tip:

First fry them to light brown color and then bake them

Step 8: Dates Tamarind Chutney and Red Chilli Garlic Chutney Preparation

- puris prepared above can be used for dahi puri preparation.

-To prepare dahi puri we need to prepare few chutneys.

Ingredients for dates tamarind chutney:
-1/4 cup tamarind soaked in 1/4 cup water

-1 cup deeseeded dates soaked in half cup water

-2 tsp coriander powder

-1tsp red chillipowder

-1 tsp ginger powder

-black salt for taste

Ingredients for red chilli garlic chutney:

-10 dry red chilles

-6 to 7 garlic cloves

-salt for taste

Step 9: Procedure for Dates Tamarind Chutney

-Soak 1/4 cup tamarind in 1/4 cup water and microwave

-similarly soak 1 cup deseeded dates in half cup water and microwave

-Extract tamarind juice and add to blender.

-Even add soaked dates,coriander powder,red chilli powder,black salt,ginger powder,cumin powder and blend by adding water.

-Take a sauce pan and trabsfer this blende dpaste, add half cup of water and boil until the paste becomes thick.

Step 10: Procedure for Red Chilli Garlic Chutney

-soak about 10 red chillies in hot water for about 30 minutes.

-Add soaked chillies in blender with 6 to 7 garlic cloves and salt

-Blend to paste by adding water to it

Step 11: Ingredients for Paneer Dahi Puri

-After preparing puris and chutneys final step is to make dahi puri.

Ingredients for paneer dahipuri:

-30 puris

-one to one and half cup crumbled paneer

-Fresh green peas boiled

-3/4 cup dates tamarind chutney

-1/2 cup of red chilli garlic chutney

-spicy tomato ketchup

-2tsp red chilli powder

-1to 2 tsp chat masala

-2tbsp coriander powder

-aamchur powder

-pani puri masala

-salt for taste

-Thick curd

-pinch of sugar

-sev

Step 12: Procedure for Paneer Dahi Puri

-Paneer is indian cottage cheese which is available in all indian stores. we can also prepare it at home very easily. Here is the link of hoe to prepare home made paneer.

-Take the paneer slices and crumble it.

-Now take the crumbled paneer in pan and all spices red chilli powder,coriander powder,cumin powder,chat masala,aamchur powder,cumin powder,panipuri masala and salt.

-Adjust all spices according to your spice levels

-Mix all spices with paneer and slightly heat it for 3 minutes. Add spicy tomato ketchup to it and mix

Step 13: Filling

-Next step is filling. Take puris and make hole at the centre.

Step 14: Fill With Crumbled Paneer

-Fill the puris with prepared spicy crumbled paneer.Fill 3/4 of puris with crumbled paneer

Step 15: Add Boiled Fresh Green Peas

-Next add boiled fresh green peas on top of crumbled paneer

Step 16: Add All Chutneys

-Now add all chutneys dates tamarind chutney,red chilli garlic chutney in all puris

- Next add sliced onions

Step 17: Add Thick Curd

-Add pinch of sugar to curd and mix. Add this thick curd and also sev on top of it.

-Finally sprinkle red chilli powder,chat masala on top.

-Garnish with coriander or curry leaves
