Introduction: Paneer Vegetable Biryani
- Paneer vegetable biryani is another popular one pot meal.
-Veggies and cottage cheese blended with all spices gives nice aromatic flavour to it.
Step 1: KEEP ALL INGREDIENTS READY
Ingredients:
- Tsp black cumin seeds
- Small inch cinnamom stick
- 2 cardamom and 2 cloves
- Bay leaf
- 2 red chillies or green chillies
- 2 Tsp coriander powder
- 2 tsp biryani masala powder
- salt as per taste
- Tsp ginger garlic paste
- pinch of turmeric
-Bowl of all mixed veggies(cauliflower,potatoes,beans)
Step 2: SLICE PANEER CUBES
-Even slice paneer cubes(indian cottage cheese) and keep ready
Step 3: SAUTEING
-Take little oil in vessel and when is heated add tsp black cumin seeds.
-when they splutter add cinnamom,cloves,bayleaf and cardamom and saute for few minutes.
Step 4: ADD GINGER GARLIC PASTE AND DRY RED CHILLIES
-Next add tsp ginger garlic paste and dry red chillies and saute till raw smell of ginger leaves
Step 5: ADD SPICES
-Next add pinch of turmeric powder and 2tsp coriander powder
Step 6: ADD REMAINING SPICES
-Next add remaining spices 2 tsp biryani masala powder and salt as per taste
Step 7: MIX ALL SPICES
-After adding all spices give a mix.
-Saute for few minutes till oil absorbs all spices.
Step 8: ADD ALL VEGGIES
-Add all sliced veggies.I used cauliflower,beans and potatoes.you can add veggies of your choice
-After adding veggies give a mix so that the entire spice mixture coats the veggies.
Step 9: ADD SLICED PANEER CUBES
-When veggies are half cooked add sliced paneer cubes and give a mix.
Step 10: ADD TABLESPOON CURD
-Finally add tbsp curd to veggies and paneer spice mixture and give a mix
Step 11: SOAK THE RICE IN WATER
-Take 2 cups of rice (sonamasoori rice) and add 4 cups of water to it and soak for half an hour.
Step 12: ADD SOAKED RICE
-Add soaked rice and water to above prepared veggies and spice mixture. Add half tsp of dry fenugreek leaves for additional flavour which is optional
-Take 2 cups of rice for 4 cups of water(2:4 ratio) for sonamasoori rice
Step 13: COVER AND COOK
-Cover and cook the rice by mixing in intervals until rice is cooked
Step 14: GARNISHING
-For garnishing i used fried onions
-Slice onions thin and long and fry them till they turn little brown color.
-Garnish prepared paneer veg biryani with fried onions
Step 15: SERVE
-Serve paneer veg biryani with raita
