- 2 cups flour
- 1/2 cup oil
- 1 egg
- 1/2 cup sugar
- 3-4 tbsp water
- 10 ripe peaches
- 1/2 cup sugar (you can use less)
- 1/2 tsp cinnamon
- pinch of ground cloves
- pinch of nutmeg
- 1/2 cup raisins
Make the dough
Sift flour into a bowl and add oil. Knead into a crumbly dough. add rest of ingredients and knead until smooth. Store 1 hour in the fridge.
Divide into 2/3 and 1/3. Put the 1/3 part aside.
Cover a buttered pie plate with the 2/3 part of dough, going up at the edges. Prick bottom with a fork and bake in 180C / 350F oven, for 10 minutes.
Meanwhile make filling
Slice peaches thinly and mix with rest of ingredients in a bowl.
When dough finishes the first 10-minute-bake, put filling into dough. Roll out remaining 1/3 of dough and either cover the whole pie, or do strips. When covering the whole pie make sure to make slits in top for steam to escape.
Bake for about 40 minutes on 200C / 400F until browned.
Cool and serve with some vanilla ice-cream or iced tea.
