Introduction: Peanut Butter Cheese Cake
This is my entry for the Pi Pie. Just a good ol peanut butter cheese cake, it sticks to the roof of your mouth and everything. This is a super simple, no bake recipe. You probably have all the stuff in the house already to make it.
Step 1: Gather the Stuff
Here is what you need to make this wonderful creation:
9in graham cracker crust, I prolly should have made this but I was feeling lazy and was a little limited on time.
1 cup of creamy peanut butter
2 packages of real cheese
1 cup of powdered sugar, Be sure to use powdered sugar as table sugar will give the pie a grainy texture
a few handfuls of semi sweet chocolate chips.
The chocolate chips are mostly for decoration but do add a kind of peanut butter cup taste to this pie. The original recipe that was given to me just started 1 cup each, peanut butter, cream cheese, and powdered sugar, add a splash of vanilla. So it is very forgiving.
Step 2: Add the Elbow Grease
I tossed two tablespoons of vanilla in the bottom of my bowl then added the powdered sugar, peanut butter and cream cheese. The order you add it doesn't really matter, because you are going to mix the heck out of it until its all homogeneous. Mix the mass until there is no streaks and all of the powdered sugar and vanilla is incorporated. I used a regular spoon for this, I tried a potato masher thinking that it would work better to mix everything with, I was wrong. What helped mixing the pie filling more was to pop the bowl in the microwave for 30 second intervals until everything was just warm enough to mix easy.
Step 3: Small Chocolaty Layer in the Bottom
I wanted to add a layer of chocolate to the bottom of the graham cracker crust. For this I dropped a few chocolate chips in the bottom and placed the crust in the oven at 350 degrees F for a few minutes. This is a bad idea. When i went to spread the chocolate around the bottom of the crust it just tore everything up. What i should have done was to place the crust in the freezer and the chocolate chips into a plastic bowl in the microwave for a few seconds to melt them. Then just pour and spread the chocolate on the bottom of the cold pie crust.
Step 4: Into the Shell
Take the pie filling and plop it in to the crust and start spreading it around. The graham cracker crust is pretty fragile so be careful. I found that on of the pastry spatulas work really great for this task. Just spread everything around until the top of the pie is all smooth.
Step 5: A Little Decoration
I shamelessly added a few chocolate chips as decoration to the top of the pie. What ever design to make it look nice and to add a little more chocolate. Or leave it plain either way .
Step 6: Detach the Saucer Section
Once the decorating was done I placed the plactic dome that came with the pie crust back on the pie and put it in to the fridge to cool. It just needs some time to cool off and firm up 45 minutes or so, if you are in a hurry go for the freezer.
Step 7: Time to Put the Hurt on This Pie
After the pie has cooled, slice and consume. I added a little whipped cream to it and went to town. This pie goes amazing with hot coffee. Enjoy
