Introduction: Peanut Butter Cookies

Following upon the success of my recent Nutella cookie Pudding instructable. I thought that i would share this one with you, Peanut butter cookies, These recipe ideas came about when i was experimenting with a normal cookie recipe and wanted to flavour them with "nut"butters and substituting at least some of the traditional butter out. Nutellas key ingredient is Hazel nutbutter with is why i thought i was appropriate to use it for that recipe.

The substitution of part of the butter content for nut butters has made them slightly healthier... Emphasis on the word slightly. Nut butters like Peanut and hazel contain far greater amounts of Monounsaturated and Polyunsaturated fats and protein that are all good for the body. The substitution for the nut butters also changes the texture of the cookies, giving them a far more flaky crumbly and light taste, ultimately they are delicious. 

This recipe is so simple that a child could do it, in fact i suggest that they do, make it with your Children, young cousins, nephews and nieces

Ingredients:
120g plain flour
45g caster sugar
45g crunchy peanut butter
1 egg yolk
65g butter, softened
icing sugar, for dusting

The four steps;
Combine Dry Ingredients
Combine Wet Ingredients
Form dough
Bake

Step 1
Combine Dry Ingredients 
Mix the Flour and the caster sugar in a bowl large enough to accommodate the rest of the ingredients 

Step 2 
Combine Wet Ingredients 
Add the Peanut butter, the butter and the egg yolk to the mixed flour and sugar 

Step 3 
Form the Dough
With freshly washed hands, press the ingredients though your fingers this technique is called rubbing in, it should be done until you have formed what looks like bread crumbs and can be brought together to create a smooth dough. Be careful not to over work the dough otherwise you will end up with far tougher cookies that work fall apart in your mouth.

Step 4 
Bake
Heat the oven to 180C/350F/Gas mark 4 
then shape the dough in to 6 balls,which you need to place in a buttered tray. Just before you but them in the oven press hard down on the top of each of them with a fork this will give you a very simple patter and help to flatten them. 

Finally place them in the oven and bake for 10 minutes. 

Serve with a dusting of icing sugar and preferably if your me a strong black coffee.
