Peanut Butter Honey Cookie Pops

I figured it was about time for me to venture into the area of cake pops again. But, like with my Brownie Pops, I didn't want to use cake. I eventually decided on peanut butter cookies and, initially, I was just going to mix the cookie crumbles with peanut butter (which would be fun to try to if you don't like honey) but then my husband suggested honey. And it was a very good suggestion!

Step 1: What you Need

Ingredients:

Peanut Butter Cookies
Honey - about 1 cup
Chocolate Candy Melts of some type*

Tools:

Cookie Sticks
Bowl to melt chocolates in
9 by 13 pan or cookie sheet
Spoon
Bowl for mixing
Pan you can stick in the freezer
Parchment or Wax Paper
Styrofoam or something to stick the pops in while the chocolate coating is drying.

*This recipe will yield about 30 cookie pops and if you use 12 oz of candy melts, you should have enough with just a bit left over after dipping all of the pops.

They are so easy to do too! 'Cept for the coating in chocolate, but I'm pretty sure that's just me :)

Nope... it's not just you. The candy melts are a pita. I add a little coconut oil to the batch when I use them... which isn't often.

You did a great job with the thin coating.

Oh, ha! I just looked up pita; I wasn't sure what you meant :) So does coconut oil make it thinner than?

Yes. Just a little coconut oil in the melted candy makes it thinner, then solidifies when the shell cools.

Thanks :) I was a bit worried about how they looked especially since they were so frustrating to cover. In the end, I gave up trying to make them look nice and I was just glad they were edible!

my baker daughter said " Good GOD DAD, what's with you and BACON?" I know it sounds odd but bacon really does go with pnutbutter, honey and chocolate so why not everything together!

I gotta say, bacon is awesome! I usually just eat it as bacon, but there is nothing wrong with adding it to meals, especially if they go really well together :)

And they really aren't to hard to do! It would be much easier to just dunk the balls in chocolate and let them just be peanut butter balls instead of pops! It's a nice way to enjoy them without the hassle.
