For this delightful chewy cookie, you will need:
- 1 1/4 cups plus 1 teaspoon confectioners' sugar
- 1 cup (4 ounces) finely ground blanched almonds
- egg whites from 3 large eggs
- Pinch of salt
- 1/4 cup granulated sugar
- 1/2 teaspoon peppermint extract

Well this varies depending on the size of the cookie. 24 tiny ones, 12 normal ones.
