Peppermint Chewy Cookie Thins

Step 1 Ingredients

For this delightful chewy cookie, you will need:

• 1 1/4 cups plus 1 teaspoon confectioners' sugar
• 1 cup (4 ounces) finely ground blanched almonds
• egg whites from 3 large eggs
• Pinch of salt
• 1/4 cup granulated sugar
• 1/2 teaspoon peppermint extract

Well this varies depending on the size of the cookie. 24 tiny ones, 12 normal ones.
