Step 1: Ingredients

The ingredients below will make four servings. Adjust as needed.

  • 2 Large boneless chicken breasts
  • 1oz (16pcs) Pepperoni
  • 4oz Shredded Mozzarella
  • Grated Parmesan
  • 8oz Tomato Sauce
  • 14.5oz Diced Tomato
  • Spaghetti Noodles
  • 2 Eggs
  • 2oz Panko bread crumbs
  • Garlic Powder
  • Italian Seasoning
  • Dried Oregano
  • Salt
  • Pepper
  • Sugar
  • Chopped Parsley
  • Flour
  • 1 cup Cooking Oil

Step 2: Directions

Cut the chicken breasts in half, giving you four pieces.

Carefully cut a slit into the center of the chicken breast, creating a pocket.

Coat each in the dry seasonings (oregano, salt, pepper, garlic powder, Italian seasoning).

Stuff 4 pepperoni and as much mozzarella as you can into each chicken breast.

Roll the breast in flour.

Dip the breast in the egg.

Roll the breast in the panko.

Place in hot skillet with 1 cup of cooking oil.

Cook just long enough to brown them lightly on each side, then remove and place on a baking dish.

Put the chicken in a 350 for 25-30 mins.

Start a pot of water to boil and add the spaghetti noodles when it comes to a rolling boil.

While you wait on the chicken to cook and water to boil, begin making the sauce.

Add the diced tomatoes and tomato sauce to a sauce pan on medium heat.

Add roughly 1 tsp of each of the dry ingredients (garlic powder, oregano, salt, pepper, Italian seasoning, and sugar)

Mix well and let simmer while you wait on everything else to finish.

Step 3: Putting It All Together

Lay a bed of spaghetti on the plate.

Put a layer of sauce over the spaghetti.

Lay the fillet on top the the sauced noodles.

Top the chicken with a little more sauce.

Then sprinkle mozzarella, parmesan, and parsley (or basil if available) over the top of the chicken.
