Introduction: Pi-fecta of Deliciousness

This trio of three delicious flavors, strawberry, orange, and bittersweet chocolate make this pie worth enough for anyone who can handle their sweets.

Step 1: The Ingredients

1 unbaked pie shell
1 c. bittersweet chocolate chips
3/4 c. cream
16 oz cream cheese, softened
1/2 c. sugar
1 egg
1 t. orange extract
1 c. frozen (or fresh) strawberries
1/4 c. sugar
2 T. cornstarch

Step 2: Making the Chocolate Bottom

Preheat oven to 350.
Place cream in small saucepan and heat to scalding.  Remove from heat and add chocolate chips.  Let stand for a couple of minutes to soften.  Then stir vigorously until fully blended.  Cool chocolate by putting in the refrigerator.

While chocolate is cooling, bake pie shell for about 12 minutes.  Remove and let cool.

After chocolate has cooled, pour into bottom of shell.

Step 3: Mix the Cream Cheese Filling

In a medium mixing bowl, add cream cheese, egg, sugar and extract.  Beat with electric mixer until smooth.  Pour into pie shell, slowly over the chocolate bottom.

Step 4: Cream Cheese Filling

Bake the pie in the 350 oven for about 40 minutes, or until golden brown at the edges and the middle has firmed up.  Refrigerate for several hours.



Step 5: Berry Topping

In a small saucepan add the berries, sugar, and cornstarch.  Cook over medium heat, mashing berries as they soften.  Remove from heat once mixture thickens as is shiny.  This can be set aside until the refrigerated pie is cool enough to top.

Melt leftover chocolate chips and put into baggie.  Snip off small amount of one corner and pipe into Pi designs on parchment paper.  Once hardened, peel off and decorate the pie with the Pi candy.
