To peel peaches (and accelerate cooking), bring a pot of water to a boil.

Add peaches and boil for 5 minutes.

Remove peaches with a slotted spoon and immerse immediately in ice water.

Now your peaches will peel easily!

Tomatoes peel this way too, only scald them for a shorter time, like about 15 seconds. I also found a simpler filling. I got a can of cut peaches (peaches, peeled, parboiled, and sugar too) I drained a lot of the syrup and crushed the peaches with a fork, then added cinnamon and nutmeg. Almost instant pie filling! And it was yummy, though probably not as good as making it all myself.

Commercial products are there for your benefit! A lot of the time using canned goods can be as good if not better than what you can normally get locally, especially with peaches. ( and definitely cheaper.) Plus you get all the syrup goodness. Work smart, not hard.

Although the cost environmentally to these products can be much greater, as well.

It is a benefits/cost thing. It's up to the individual to decide which is more worthwhile of course.
