I like cheese, cookies, and jam. I found this recipe on Willowbird Baking and had to try it out.

Step 1: Recipe

Ingredients
1 cup all-purpose flour
1 cup Southern pimiento cheese, processed fine
1/2 cup pecans, finely chopped
1/4 cup butter, softened
2 tablespoons strawberry jam

Spoon

Step 2: Mix the Cookie Dough

You will need to process your pimento cheese. You will put your cheese in a food processor and blend it until it is fine. There should be few to no lumps. Then mix your flour, cheese, butter, and pecans. Cover and refrigerate you dough for at least two hours.

Step 3: Cutting and Filling the Cookies

Put parchment paper on two baking sheets. This is where the cookies are going as we make them. Dust the surface you are going to use to roll out the dough with flour. Then place your ball of dough. Dust your rolling pin with flour. Roll out the dough to about 1/8th inch thickness. Use a cookie cutter to cut out circles. My cookie cutter was 1.5 inch and I spooned about half a teaspoon of jam on each cookie. Then place another cookie on top of that one. Press down the sides so you don't get as much leakage as I did. 

Step 4: Bake the Cookies

Preheat the oven to 400 degrees F. Bake for about 12 to 15 minutes or until they have a nice golden brown color. After you take them out let them cool. The leakage was not so bad. It was not unlike a fruit roll up in taste and consistency. 

Step 5: Eat Cookie!

Eat your cookies. I could not get any of my kids to try them, but my wife and I liked them. They have a nice spice to them that is balanced by the jam. Next time I might try adding bacon.
