Portobello Mushroom with Grilled Feta Burger

Here is a great meatless burger that non-vegetarians will also enjoy. This burger is first marinated with balsamic vinegar, basil, rosemary and garlic, then grilled, then a slice of grilled feta cheese is placed on top to make this burger really flavourful.

Portobello (also spelled portabella or portabello) mushrooms are brown crimini mushroom left to grow to reach 4-6 inches in diameter. Like other mushrooms they absorb flavor from marinade really well.

I got this recipe from a friend at work (thanks Kim!), and I thought this would be a great recipe to share.

Step 1Ingredients/Equiptment

Ingredients
-portobello mushroom caps (try to find caps about the same size as your bun -there will be a bit of shrinkage when cooked)
-feta cheese(not the little cubes packed in oil but a block of the cheese)
-hamburger bun
-toppings for your bun such as mayo, lettuce, tomatoes, onions, whatever you wish

marinade
(this is for 2 servings)
- 2 tablespoon balsamic vinegar
- 2-3 teaspoons olive oil
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 1/2 teaspoon minced garlic
- salt and pepper to taste (you don't need to add very much salt since feta cheese can be
quite salty)

Equipment/ kitchen utensils
-grill or BBQ
-cutting board
-knife
-measuring spoons
-spatula
-basting brush
-aluminum foil or parchment paper
-shallow bowl
-spoon

I've been a vegetarian most of my life, and it's SO hard to find good everyday recipes for me to eat. Most of the time I have to eat what everybody else is eating and just pick the meat out. At work earlier someone was heating up something and I smelled mushrooms! I felt like a vampire in a frenzy after smelling human blood! I starting thinking about mushroom ravioli with smoked cheese sauce and my mouth began to water. Then I came home to find some french bread and starting thinking about sauteed mushroom, onion, gravy, and swiss cheese po boy, when I began looking for vegetarian mushroom recipes. I came across this one! OMG, this is perfect!! I can't wait to try this. I would grill it with a little Dale's seasoning on it in additon to this recipe. I don't really care for veggie burgers, but I eat them as an excuse to eat Dale's and BBQ sauce, heehee. Anyway, I can't wait to try this, it looks absolutely scrumptious!!!!!!!!
