This is my first instructable. Hope y'all enjoy. This soup is good and filling. Great for cold wintery nights.
Step 1: Ingredients
Four to six red skin potatoes, cubed
Salt and pepper
One small onion, diced
Pound of bacon
One cup of buttermilk
One quarter cup of sour cream
Half cup of white corn meal
Shredded Parmesan cheese
Shredded cheddar cheese
Put the diced potatoes in a large pot and cover with water. add salt and pepper to taste. Put on high heat and boil until potatoes are soft.
In a separate skillet fry bacon. Remove bacon and set aside to cool. Caramelize the onions in the bacon grease. When onions are ready add a little water and pour the onions and grease into the potatoes.
Pour in the buttermilk, sour cream, and cheeses into the soup. Mix well and add the corn meal until it reaches desired consistency.
Garnish with the bacon and cheeses. Devour!
