Introduction: Prawn (Shrimp) Sushi Burger

I first had the idea for this a while ago after seeing an advert for a sushi chain that was trying to expand in to making burgers, it struck me as a limitless idea that anything can be a burger as long as it has two "bun" like items above and below it and is circular. Anyway this was my first attempt at making a "sushi burger".  I used only ingredients that i thought would go in sushi but i tried to alter them so that they fitted more easily to the burger setting for example, the mayonnaise that i used contained Chinese five spice and rice wine vinegar. i didn't add any items that you would typically find in a burger (like ketchup, gherkins or lettuce)  but I "created" their sushi equivalent. 

It should be noted that where as this looks amazing and tastes amazing, it was not easy to make and this is mainly because   almost all of it had to be made from scratch as stores typically don't stock it.

Ingredients:

Sushi rice Buns:
1 cups uncooked glutinous white rice (sushi rice)
1 1/2 cups water
1/4 cup rice vinegar
1/8 cup white sugar
1/2 teaspoon salt

Prawn Burger:
260g medium prawn, shelled and deveined
1 egg
2 tbsp chopped  coriander leaves
1 garlic clove, peeled
90g plain breadcrumbs, more as needed
1 tsp sea salt
1/2 tsp freshly ground black pepper
2 tbsp vegetable oil

Spiced Mayonnaise:
3/4 cup mayonnaise
1 teaspoon Chinese 5 Spice
1/2 teaspoon yellow mustard powder
1 teaspoon water
1 teaspoon vinegar
1/4 teaspoon black pepper

Prawn Sushi Burger:
Sushi rice Buns
Prawn Burger
Spiced Mayonnaise
Wasabi
Avocado
Shredded sushi Nori
Lightly Fried Bean Sprouts
Pickled Ginger
Sweet Chili dipping sauce
Soy Sauce
