Introduction: Puffed Apple Pancake

A classic recipe, not to sweet but very flavourful. Great for breakfasts too.

Step 1: Ingredients

-1 cup whole/ skim milk ( well really any milk will do, this recipe can really vary) -4 large eggs -3 tbsp granulated sugar -1 tsp vanilla extract -1/2 tsp salt -1/4 tsp ground cinnamon -2/3 cup all purpose flour -4 tbsp unsalted butter -12 oz golden delicious apples, peeled cored and thinly sliced -brown sugar and powdered sugar (to top)

Step 2: Mixing

Whisk milk, eggs, sugar, vanilla, salt and cinnamon in a large bowl. I recommend whisking the eggs together first to avoid clumps of egg or more time spent whisking. Blend until smooth. Add the flour and whisk again until smooth.

Step 3: Apples

Core, peel and slice the apples thinly but not too thin (1/2" about). Place butter in a 13 by 9" glass dish. Place the dish in oven at 425 degrees until butter melts, about 5 mins. Remove dish from oven and place apples in dish. Bake in oven until apples soften and butter is bubbling (10 mins). Pour he batter over apples and and sprinkle with brown sugar. Bake until puffed and brown- 20 minutes. Sprinkle with powdered sugar and serve when hot. Enjoy for a great breakfast!
