Pumpkin Butterscotch Fudge

It's so yummy!

Smooth, rich and creamy!

If you love pumpkin, butterscotch and cinnamon...you will love these!

Step 1: You Will Need:

Ingredients:

1 cups granulated sugar

1/2 cup packed light brown sugar

6 Tablespoons butter

1/3 cup Evaporated Milk

1/4 cup Pumpkin

1 teaspoons pumpkin pie spice

1 cup Butterscotch chips

1/2 cup marshmallow cream

1 teaspoons vanilla extract

And an 8 by 8" baking dish lined with parchment

sitting on a cooling rack.

Step 2: Get Boiling!

In a medium size saucepan...
Mix the Sugars, milk, pumpkin, butter and spices…

bring to boil on medium heat.

Stir constantly 10-12 minutes until it reaches 235* F or soft ball.

Mine took about 10 minutes of rapid boiling.
I didn't use a candy thermometer...

Just take a tiny glass of COLD water and drop a small spoon of the mixture inside.

See how it all clumps together like a ball?
I roll it around with a finger to make sure it stays together in a ball.

Then it's ready!

Step 3: Add Ins

Then remove from heat and stir in butterscotch chips, marshmallow, and vanilla.

Stir a minute or so until melted...mine had some small chunks of butterscotch chips

that didn't quite melt...but that's the BEST part!

Pour into parchment pan.

Let stand 2 hours or completely
cooled.

Step 4: Cut and Dig In!

Cut into 1 inch pieces.

I cut all the edges off first so the pieces would look beautiful.
Some will break...but that's your excuse to test it out!

Serve them immediately, or store in the fridge.

Don't lick the screen! :)

Perfect addition to a holiday table!
(I'd way rather eat one of these than pumpkin pie!)

This fudge is amazing. It is the best fudge I have ever tasted! I added a 1/2 teaspoon of Vietnamese Cinnamon on top of the pumpkin pie spice to give it a little extra kick. I am male and my Mother-in-law was even impressed!

Haha, thanks! I'm so glad you could impress the mother-in-law! I need to try some Vietnamese Cinnamon...that sounds awesome! :)

Every year me and my sis make a Halloween dessert, this year I saw this instructable and chose it, we didn't get to make it till November 2 because of work, but we got it made, this pic is the batter before cooled, but it was thick. it tastes great, nice instructable!!!! will plan on making this for future Halloween events.

Nope, not pumpkin pie filling. Just canned pumpkin. :)

This recipe would be wonderful for my Granddaughter who is allergic to most nuts. I have to use almond butter for my 'peanutbutter' fudge. Can't wait to try this! Thank you!

Yes Shyrell, it's perfect! I have 1 son that is allergic to nuts and another that is allergic to chocolate! So...we compromised with this fudge and I was thrilled with the results! :)
