Step 3Make your sauce!
I made a tomato sauce with leftover deli olives.
Ingredients:
1 can crushed/diced tomatoes
2 cloves garlic, halved
a handful of pitted olives, chopped
one small celery stalk
one small onion, diced
3 basil leaves, roughly torn
1-2 tbsp olive oil
1 tsp oregano
a pinch of dried chili flakes (optional)
Directions:
1) saute the onion, garlic, celery and olives in the oil until tender
2) add the can of tomatoes and the spices. Salt is not necessary because the olives are salty.
3) simmer until it is reduced to a saucy consistency and most of the tomato chunks have broken down (about 10 minutes) stirring OFTEN.
