Ingredients:

4 tbsp butter

1 1/2 to 2 cups diced celery

3-5 shallots sliced depending on size

1 large can pure pumpkin puree

1 to 1 1/2 cup creamy peanut butter

1 1/2 cup almond milk or heavy cream

3-5 cloves minced garlic to taste

1 quart of vegetable or chicken broth

red pepper flakes to taste

1/2 tbsp ground ginger

pinch of nutmeg

curry powder to taste (about 1 tbsp)

1. Add all ingredients to crock pot and mix together.

2. Cook on high for 3-4 hours or on low for 8 hours.

3. Garnish with green onion or scallion and enjoy!
