Introduction: Pumpkin and Spinach Cake
I was getting tired of eating vegetables the same old ways all the time so I finally started to try new ways to cook them exploring the vegetarian / vegan world that was not yet so familiar to me.
This Cake is perfect for fall or Halloween too.
Step 1: Ingredients
To make this easy recipe you'll need just few ingredients:
- 200 g fresh spinach
- 200 g pumpkin (steamed or boiled)
- 120 ml soy yogurt
- 75 g wholemeal wheat

- 2 tbs pumpkin seeds
- 130 ml water
Step 2: Prepare the Mixture
Once gathered all the ingredients you can start.
Combine the flours with salt and baking powder. Mix then add the yogurt. Once the mix is combined gradually add the water and mix until the dough is smooth and homogeneous.
Finally add a tablespoon of oil and mix again.
Step 3: Add Vegetables
Once you’re done with the mixture it’s time to add vegetables to it.
Add the pumpkin that you previously cooked and chopped to the mix of flours, yoghurt and oil. Mix everything together.
Then squeeze and coarsely cut spinach that had previously been sautéed with a little oil and salt (do not add water to sauté). Add it to the rest of the ingredients and mix well.
Step 4: Bake Time!
Pour the mixture into the cake mold and cover with pumpkin seeds.
Bake at 180°c (350°F) for about 45 minutes (according to the cooking time that you usually use with your oven).
Step 5: Serve!
Your cake it's ready! Serve warm!
