Step 6Boil, boil, oh, and boil
This is the boring part, sorry... but in order to get the best quality sugar mix, and do it safely, you must boil.
Also, in this stage, it will LOVE to over boil, be VERY VERY VERY careful to not let it do so. Cook on med heat.
Seriously, don't let it over boil, or you'll have smoke going everywhere, and just a general mess.
the GOOD news is that because there's water in there, the mixture can't get over 212 degrees F (100 degrees C) So, no worries, the pot will NOT spontaneously ignite. Nor will it caramelize.

FYI, since you have put plenty of electrolytes in that water, it is significantly Hotter than 100 C. seeing as how it is currently super-saturated, I would wager that the water is at least 150 C and could range up to 200 C depending on just how much you've managed to dissolve.

interesting point, To be honest I wouldn't know... maybe I'll have to pull out my thermometer and see! There's definitely a LOT of stuff dissolved in there... oops, you're definitely right though, I seem to have forgotten my basic chemistry... :) Regardless, it still is not to the melting point of the sugar, and definitely not to the ignition point. But, I'll think about how I can add it in... Thanks a ton though!
