Picture of Quick Banana Bread from scratch
Everyone has faced the problem of bringing home a bunch of green bananas and having them become over-ripe in what seems like minutes. While over ripe bananas are too mushy to carry around like a portable snack, there's no reason to waste them when with just a little butter, some flour, sugar, spices and an egg you can make delicious quick banana bread.
You'll need to gather the following: (everything should be about room temp)
  • 1 3/4 cups sifted all purpose flour. (I use unbleached.)
  • 2 1/4 tsp double acting baking powder
  • 1/2 tsp salt (may be omitted for low sodium diets)
  • 1/2 tsp good vanilla (not the weird fake stuff)
  • 1/3 cup butter (5.5 tbsp)
  • 2/3 cup sugar
  • 3/4 tbsp orange zest (or lemon zest)
  • 1 or 2 eggs. (I had jumbo eggs, so I used one. If you have small eggs, use two.)
  • 1-3 ripe bananas
  • spices to taste (I used (approximately) 1/8 tsp cardamom, 1/8 tsp ground clove, and about 1/2 tsp each of cinnamon, allspice and nutmeg. Ginger also works well in this recipe if you like ginger.)
  • Optional: Planetary mixer

Step 1: Bring on the mixer!

1.) Preheat your oven to 350 degrees F (177 C)
2.) Cream butter, sugar, vanilla, and zest.
3.) Beat in eggs and banana until mixture is creamy, but not so long that it starts to separate.

Time may vary depending on mixer. Planetary mixers like mine will do this in under 90 seconds, hand mixers may take a lot longer.)
Scrape the sides back down, as needed before the next step.

I just tripled this recipe with about 8 bananas, and I am very thrilled with the results so far, that is, licking the bowl. Well done.
Okay, so I realize that it's been a while since anyone posted here, but I'm about to give this yummy banana bread a shot, i'm gonna use only one banana since I only have one, and it's my first time with banana bread, so if I mess up, it will be as small a mess up as possible!

I was planning on using 1/3 cup honey, 1/3 cup brown sugar , instead of 2/3 regular sugar. Do you figure that will be okay?

I'm sure it'll be fine. The honey will make the bread a little more dense, but since it's a quick bread, it's a really forgiving recipe. Hope it was yummy!
Looks like a wonderful recipe.  I jsut wonder if by using an electric mixer you aren't over mixing the batter.  I mix my batter breads with a spatula just until incorporated.  I make a tropical variation of banana bread using bananas, coconut, pineapple, applesauce, cherries and nuts that is wonderful!  Tropical Banana Nut Bread

Can I use regular baking powder? Or does it have t be double acting baking powder?

OH meh gawd. I made it and and added 1/2 cups of hazelnuts to it (I didn't have walnuts) ! I love a crusty bread so I used a pan with 9 mini loave molds. It produced the most yummy, banana bread ever! Thanks for the recipe!

Yum! I love hazelnuts so very much. You know what might make your recipe just completely over the top? Drizzle a little melted chocolate on...but then, I'm a firm believer in chocolate. ;) Your addition sounds so yummy! I can't wait to get my braces off so I can try it!
Okay! It was so good and went to quickly that I doubled the recipe! I made them again and they were so light and fluffy (before they were more dense, but I think I may like fluffy better XD)!!! The other half of the batter is in the oven right now and I can't wait until it's out. My god sisters are going to Lake Tahoe tomorrow so I'm giving them half of the batch to take with them. This time we used walnuts and macadamia nuts! YUMMY! The ovens beeping I better go check on the batch!

I love this recipe, Thanks So Much! They were going to take it to Lake Tahoe, but they finished it before they left. XD yeahhh... Next time I'm using chocolate chips and pumpkin(replacement for banana)! That's really cool that your braces are coming off, yummy food entering your world again!

Oooh, lemme try and dig out my pumpkin recipe for you. It's amazing. In the meantime if you modify this recipe with pumpkin, because it's a water dense veggie, you'll want to have extra flour on hand, and just add it 1/4 cup at a time until you get the right texture with your batter. Also, pumpkin spices up beautifully with cardamom, which a lot of folks don't use, so it gives you a groovy different taste. Also, I've just planted this years crops, but when the zucchini and squash start coming in, I'll share how to make zucchini bread which is ...oh...so good. :)
Thanks for the tips! A pumpkin recipe would be great! I also have some pumpkin pie spice which has cardamon in it! I would probably use that. :) The sad thing is that I found out that I need braces about 3 days ago. Ehhhh. :(

Oh, poor baby! Stock up on soft foods and pain killers. (Although, to be fair, I'm a big ol baby when it comes to pain.) :) It's been crazy this week since I've signed up for a pastry class, but I swear, after Easter, I'll hunt down the recipe. :)
Thanks for the tips <3 Basically I'm getting 2 teeth extracted in 2 weeks, and a week later I'm getting an expander. Then 2 months later I get braces, fun. :) This is going to be painful.

Oh, you poor thing! The expanders really are the worst. Well, I say that, but they just wired me in for my last two months, where the move some of the roots around...and OMG. I cannot believe we do this to children. That's just wrong. If it weren't for rum and hydrocodone, I swear, there would be a body count. :)
HAHA. Lol. :) Next Tuesday I going to have 2 teeth pulled out. A week later I'm getting spacers. Then a week later an expander. Then 2 months later braces. It only gets worse and worse. :) Well if you could survive it, I probably can. :)

oooh, speaking of squishy: try quickie banana brulee. slice a banana in half lengthwise, put it in a baking dish, sprinkle it with some brown sugar that you've mixed with a little cardamom and a tiny amount of vanilla. Broil for about 2 minutes, just enough to caramelize the sugar. It's so good, you'll forget how much you hate your dentist. :) (Of course, things like this are how I managed to not lose weight while having braces. Heh.) Hey, could be worse, I could be Paula Dean...at least I didn't recommend starting with a stick of butter. ;)
That sounds really good! I've got to try it now that I have 2 less teeth for chewing. It actually didn't hurt at all, but my mouth is sore from the numbing medication and It's uncomfortable to eat. -goes to make the banana brulee-

Can I use Crisco or 'Smart Balance' butter spread instead of real butter??

A shortening product like crisco would probably work. I'm not sure about spreads though, because those have a pretty high water content, I think. I've never tried them, so I don't know. Let me know how it works if you try! :)

It's really easy! And it'll keep for about a week in the fridge. And yes, Igor favorite instructables to help with, are the ones where he gets to eat the results. :)
