Introduction: Quick Chessy Corn Scramble. . .on Toast!

This is a quick and yummy breakfast that hits the spot.   Also uses up some left overs.

Step 1: Ingredients

For this cheesy corn scramble for one, you will need:

Cheese (shredded)
Corn
2 Eggs (for the scramble)

Pepper
Garlic Salt
Chives (dried or fresh)

Bread (for toast)

Step 2: Cooking

Place a  pan on medium low heat with a dollop of oil, just enough to coat the pan.

After the oil is heated, add 2 to 3 tablespoons of corn.  Sprinkle with Pepper, Garlic salt and dried chives to taste.

Stir and allow to simmer for about 2 minutes. 

Meanwhile, crack 2 eggs into a bowl and beat with a fork/whisk.

Pop the bread into the toaster.

Pour the eggs over the corn.  Scramble the eggs and corn together.

With the eggs cooked gather the scramble together and sprinkle a good amount of cheese over the top.

The residual heat should melt the cheese, but for a better melt, just pop it into the broiler for 30 to 60 seconds.

Step 3: Plating

Place one piece of toast on the plate.

Use a spatula to place the Scramble onto the toast.

Top with a light sprinkle of dried/fresh chives.
